Prepare a cold bain marie (a large bowl with water and lots of ice).

Heat the water with the honey in a saucepan on a medium heat, stirring until completely dissolved.

Add the cleaned fig leaves, remove the pan from the heat, cover it with cling film and place it on the inverted bain-marie. Leave to infuse for 10 minutes.

Remove the fig leaves and allow the syrup to cool completely.

Mash the melon together with the lemon juice and cold syrup until smooth.

Pour the mixture into the ice lolly moulds, insert the sticks and freeze for at least 8 hours.
Finish and presentation Remove from moulds and serve well chilled.
