Apollo is the first cookbook dedicated to Frederik Bille Brahe’s restaurant-museum in Copenhagen. It includes 104 recipes, created together with chef Yuta Kurahashi, that fuse Danish cuisine with Japanese, French and Italian influences. Frederik Bille Brahe, a Copenhagen-based chef, is the founder of Atelier September and Apollo. His work combines cooking, aesthetics and lifestyle, a philosophy also reflected in his previous cookbooks.
